What figures would one use for GNW Saxon cuirassiers?

Just use standard Horse (WSS07).   The cuirass was worn under the coat.

The early Saxons could still have the cuirasses 'exposed' but Pete is right usually they were hidden under the coat. If you wanted to do them I would suggest using SYW Cuirassiers - Austrian, Russian or Prussian.
