For Baccus 6mm Peninsular Spanish infantry and cavalry, start with a black or grey undercoat, then block in blue coats (Vallejo Prussian Blue or Citadel Kantor Blue base, highlighted with a lighter blue drybrush), white breeches/trousers (Vallejo White or Off-White), and yellow facings/cuffs (Vallejo Flat Yellow highlighted with Pale Yellow) for line regiments like the Regina Infantry. Add black gaiters/shakos (Citadel Abaddon Black), brass buttons/helmets (Vallejo Brass with metallic highlight), red plumes/collars on elites (Vallejo Flat Red), and flesh tones (Foundry Flesh base/shade); for guerrillas, use earthier browns/greys. Drybrush bases with green flock, finish with Army Painter Strong Tone wash for shading, and varnish—check Baccus' own FPW painting guide on their site for exact uniform plates per unit. Are you thinking only of the uniforms supplied by the British later in the war? The many different colours used during the war by the regular regiments and those raised locally are part of the appeal of the war. Balagan is a good place to start, as is Sapherson's Peninsular War 1808-1814.
