I just use roofing felt cut up and sprayed a suitable colour

i tried the caulk method but find that the curling on the sides was to much of a problem for my OCD. any ideas on keeping it from doing this? so i may give it another go

I can't help you with that as mine didn't curl on the sides.  Perhaps too much water when flattening them?

I'm on the cheap side. I get a yard of felt cloth, khaki or earth colored. I put lines of glue on to flock the sides and center to make the "ruts" stand out. I also get dirt gravel to flock with as well. looks good and felt holds well to my woodland scenes mat.

If you are going pre-internal comubstion engine there would be no grass down the centre.  That style of road is very much a product of motor vehicles.  The draught animals would churn the centre of a road so no grass.
